Field notes

A saffron harvest at dawn

On the Pampore plateau, Mongra threads are hand-picked before the sun and cured the same day. We time the visit to the bloom and record the field, the grade, and the aroma.

Twenty-five years in the acetaia

A family battery of shrinking casks — cherry, oak, juniper, mulberry — in Modena. Each transfer concentrates the balsamic further. Cellared, not made; time is the ingredient.
